Chudas Parnicky, a chef originally from Thailand who relocated to the UK in 2005, expressed that her dream “has come true” following the launch of her latest restaurant. Ms. Parnicky stated she was “over the moon” about expanding her enterprise and introducing authentic Thai flavours to Peterborough City Centre through Taste of Thailand, a new 54-seater establishment. Initially, she established a Thai food truck, which she was compelled to close because of the Covid pandemic. Subsequently, the chef opened a restaurant located inside the Woolpack pub in Stanground. Having exceeded the capacity of that location, she is now occupying the former Pizza Parlour venue situated in Cowgate. Ms. Parnicky, also identified as Emma, is a self-taught culinary professional. Her family resides in Thailand, and her brother, who is also a chef, is currently in the process of relocating to join her. The new establishment will feature an open-style kitchen staffed by a team of “sexy and crazy chefs,” Ms. Parnicky further noted. David Nightingale, her business partner, commented: “We have done this new venue as a Bangkok -style street restaurant with colourful lights and a very vibrant decor.” He added: “We think we will offer something different and we want people to be proud of Peterborough. We are in fact fully booked for the next week or so.” Nightingale also stated: “Let’s try and push the city postiviely and supporting independents like us will help.” Mr. Nightingale expressed his hope that Peterborough City-council would advocate for a pedestrianised city centre to render it “vibrant and attractive,” akin to various other European cities.
